So, when I am busy midweek, get in late and just want dinner to happen, I usually resort to my usual method of ‘throwing things at a pan’ in the name of sustinance. Sometimes this works, sometimes not but this little success I thought I’d share. With a packet of beef sausages, a few veggies and store cupboard ingredients (harissa, stock, tomato concentrate) you can layer up a quick dinner in about 15mins. Dollop on some mint and coriander yoghurt at the end and this is the definition of a cracking midweek bowl food staple. Enjoy!
